Our story
A bakery that started with one sourdough starter and a borrowed oven.
Birch Bakery began in 2014, when Maya and Tom Hale started selling loaves from their front window on Alder Lane. The queue grew faster than the kitchen, so they took on the old greengrocer's across the road, named it after the silver birch outside, and have been baking there ever since.
We still do things slowly: long ferments, real butter, local flour milled twenty miles away. Most mornings you'll find the same faces at the café tables, and we like it that way.
